Ingredients:
½ cup Green Salsa Hummus
2 ears of corn, grilled and kernels removed
½ cup cherry tomatoes, halved
¼ cup red onion, finely chopped
¼ cup chopped fresh cilantro
Juice of ½ lime
Optional: diced jalapeño, cotija cheese
Instructions:
Grill corn until slightly charred, then slice kernels off the cob.
In a bowl, combine grilled corn, tomatoes, onion, and cilantro.
Stir in the green salsa hummus and lime juice until fully coated.
Mix in jalapeño or cotija cheese if using.
Chill and serve as a dip, taco topping, or side dish.
