Crispy Chickpea & Hummus Lettuce Cups

Ingredients:

  • ½ cup Original Hummus

  • 1 cup canned chickpeas, drained and rinsed

  • 1 tsp olive oil

  • ½ tsp cumin or smoked paprika

  • 6–8 romaine or butter lettuce leaves

  • Optional: diced red onion, shredded carrots, or hot sauce

Instructions:

  1. Heat olive oil in a skillet over medium heat and add chickpeas.

  2. Season with cumin or paprika and sauté until golden and crispy (5–7 minutes).

  3. Spread hummus inside each lettuce leaf.

  4. Spoon crispy chickpeas into the center.

Add optional toppings like red onion or hot sauce, and serve as a light lunch or appetizer.
